Yes, they are beautiful, but they are also quite tasty when properly prepared. You have to start cooking them upside down in a wine-based broth with veggies then turn them over at the end, because being flying wild birds they are not soft and mushy like pen-raised poultry and require braising for the most flavor and tenderness. Also, allow the bird to rest for about 15 minutes before carving or else it will be dry. Or else, top them with salt pork over the beast and drumsticks and cover that with wet cheesecloth, then remove the cloth and salt pork and finish crisping in a hot oven. I saw that last one on a cooking show about turkey, tried it on a Canadian honker I had taken and it works as well on goose.
